Pork Tenderloin Stuffed With Applesauce - cooking recipe

Ingredients
    2 pork tenderloins, trimmed (about 1 lb. each)
    1/4 c. apple juice
    2/3 c. chunky applesauce (no sugar)
    2 Tbsp. finely chopped peanuts (dry roasted)
    1/4 tsp. fennel seed
    1/8 tsp. pepper
Preparation
    Slit each tenderloin lengthwise to form pocket.
    Place in baking dish. Pour juice into pockets.
    Cover and marinate about 45 minutes at room temperature (for longer marinating refrigerate). Spray 10 x 15-inch pan with nonstick spray.
    Fill slits with applesauce, peanuts and fennel seed and pepper. Secure with toothpicks.
    Bake at 375\u00b0 until registers 155\u00b0 for 30 minutes or bake about 45 minutes.
    Serves 8.
