Crab Cakes - cooking recipe
Ingredients

2 Tbsp. butter or margarine
3 Tbsp. flour
1 c. milk
2 egg yolks, slightly beaten
2 cans (6 1/2 oz. size) crabmeat
2 Tbsp. chopped parsley
1/2 tsp. salt
1/8 tsp. nutmeg
dash of cayenne
1/2 c. soft white bread crumbs
3/4 c. dry bread crumbs
salad oil
Preparation

Melt butter in medium saucepan; remove from heat.
Stir in flour to make smooth mixture.
Gradually stir in milk.
Bring to boiling over medium heat, stirring, reduce heat and simmer 1 minute.
Beat some hot mixture into egg yolks.
Return to rest of mixture in saucepan.
Cook, stirring, several minutes until thickened.
Remove from heat.
Drain crabmeat.
