Beef Broth - cooking recipe

Ingredients
    1 lb. boneless beef, all fat removed and cut into small cubes
    1 1/2 c. celery, chopped
    1/2 c. carrots, chopped
    1 c. leeks, chopped (white part only)
    1/2 tsp. salt
    1 qt. cold water
Preparation
    Place all ingredients in 3-quart pot and bring to a boil. Partly cover pan and simmer for 1 hour.
    Strain.
    Chill and remove fat.
