Cheese Manicotti(Diabetic Recipe) - cooking recipe

Ingredients
    15 oz. part-skim-milk Ricotta cheese
    1/4 lb. part-skim-milk Mozzarella cheese, diced
    2 eggs, beaten
    3/4 c. grated Parmesan cheese
    2 Tbsp. snipped parsley
    1/2 tsp. salt
    dash of freshly ground pepper
    1/4 c. wheat germ
    1 (8 oz.) pkg. manicotti tubes
    1 (15 oz.) can tomato sauce
    1/4 c. grated Parmesan cheese (additional)
    1/4 c. shredded part-skim-milk Mozzarella cheese (additional)
Preparation
    Mix Ricotta cheese, diced Mozzarella cheese, eggs, 3/4 cup Parmesan cheese, parsley, salt, pepper and wheat germ thoroughly; set aside.
    Preheat oven to 350\u00b0.
    Cook manicotti tubes as directed on package; drain.
    Fill tubes with cheese filling, using butter knife or teaspoon.
    Place filled tubes in greased baking dish (11 3/4 x 7 1/2 x 1 1/2-inch).
    Pour tomato sauce over tubes. Cover with aluminum foil; bake at 350\u00b0 for 15 to 20 minutes. Remove foil; sprinkle with 1/4 cup Parmesan cheese and shredded Mozzarella cheese on top.
    Bake, uncovered, 10 minutes longer.
