Roast Possum - cooking recipe
Ingredients

1/2 c. cornbread, crumbled
1/4 c. white raisins
1/2 c. chopped pecans
1 tsp. sage
1 tsp. Italian seasoning
1/8 tsp. garlic powder or 1 to 2 fresh cloves garlic, minced
plump young possum, dressed but not cut up or 2 (1 lb.) pork tenderloins
1/4 c. chopped celery
1/2 c. minced onion
1/2 Tbsp. chopped fresh parsley
salt and pepper to taste
1/2 c. apricot jam
1/4 c. bourbon
Preparation

First thing you do is catch the possum.
You'll want to cage him and fatten him before you eat him.
If you can't catch a possum, you can substitute pork instead.
