Carrot-Pineapple Cake(Diabetic) - cooking recipe

Ingredients
    1/2 c. margarine, softened
    3 eggs
    1 c. thawed, frozen, unsweetened pineapple juice concentrate
    2 tsp. vanilla
    2 1/2 c. flour
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. nutmeg
    1 tsp. cinnamon
    1/4 tsp. salt
    1/2 c. chopped pecans
    3 c. shredded carrots
Preparation
    Beat margarine until creamy; blend in eggs, pineapple juice and vanilla.
    Combine flour, baking powder, baking soda, spices and salt.
    Gradually add to egg mixture, beating until well blended.
    Stir in carrots.
    Spread batter into greased 12 x 8-inch dish.
    Bake at 350\u00b0 for 30 minutes.
    Cool.
