Eggplant Souffle - cooking recipe

Ingredients
    1 medium eggplant
    1/4 c. cooked, chopped onion, drained
    1 can Cheddar cheese soup
    2 egg whites
    salt to taste
    pepper to taste
    shredded cheese
Preparation
    Chop eggplant; cook and drain.
    Mix eggplant and onion together.
    Add soup.
    Fold in stiffly beaten egg whites, salt and pepper.
    Place all ingredients in a casserole dish; add shredded cheese on top.
    Bake at 275\u00b0 for about 40 minutes.
