Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1/2 onion, sliced
    1/2 tsp. salt
    1 1/2 c. bread crumbs
    2 slices bacon
    1 1/2 c. tomatoes
    dash of red pepper
    1 c. grated Parmesan cheese
Preparation
    Pare eggplant and cut into small pieces. Cook in boiling water with salt until tender. Drain and mash.
    Place bacon in skillet and cook until brown. Add onion; cook gently 15 minutes.
    Add tomatoes and seasonings; cook another 15 minutes. Combine eggplant to tomato mixture. Add 1 cup bread crumbs and 1/2 the cheese. Place in greased casserole dish and sprinkle with remaining crumbs and cheese.
    Bake at 350\u00b0 for 15 minutes.
