Potato Soup - cooking recipe

Ingredients
    6 c. chicken broth
    1 c. water
    6 c. chopped potato
    1 c. chopped onion
    1 c. chopped celery
    1/2 c. chopped carrot
    1 tsp. salt
    1 tsp. pepper
    1 tsp. thyme leaves
    6 slices bacon, crisp fried and crumbled
    1/4 c. chopped parsley
    dash of Tabasco
    1 c. heavy cream
    grated Cheddar cheese (optional)
Preparation
    Combine all but bacon, parsley, Tabasco, cream and cheese in a large kettle.
    Simmer 1 1/2 hours or until vegetables are tender. Blend half of soup (to thicken) in blender and return to kettle. Add bacon, parsley, Tabasco and cream.
    Bring just to a boil. Adjust seasonings.
    Serve topped with cheese.
    Serves 8 to 10.
