Cheesy Broccoli Rice - cooking recipe
Ingredients

1 small onion
1/2 medium red bell pepper
2 c. instant rice
1 1/3 c. water
1 (10 3/4 oz.) can condensed broccoli and cheese soup (undiluted)
1 Tbsp. minced fresh parsley
1/2 tsp. salt
Preparation

Chop onion and set aside. Dice red bell pepper and set aside. Lightly spray a medium saucepan with nonstick cooking spray and heat over medium heat. Add chopped onion and diced red bell pepper to saucepan. Cook, stirring often, until tender. Add instant rice to saucepan; stir well to combine. Add the water, undiluted broccoli and cheese soup, minced fresh parsley and salt. Mix well. Bring the rice mixture to a boil. Reduce the heat. Cover and cook rice mixture until liquid is absorbed and the rice is tender, about 10 minutes.
Serve rice immediately.
