Hummingbird Cake - cooking recipe
Ingredients

1 1/2 c. oil
2 c. sugar
3 eggs
1 tsp. vanilla
3 c. flour
1 tsp. soda
1 tsp. cinnamon
1 (8 oz.) can crushed pineapple
2 bananas, diced
1 c. pecans
1/2 c. coconut
Preparation

Thoroughly mix sugar, eggs and vanilla.
Do not use mixer, then add dry ingredients.
Mix well, add fruit and nuts.
Bake in greased and floured tube pan at 325\u00b0 for 1 1/2 hours.
Cool completely before removing from pan.
This is a must.
May also be baked in 3 or 4 layers at 350\u00b0 for 25 to 30 minutes.
