Oatmeal Muffins - cooking recipe
Ingredients

1 cup rolled oats (regular or quick cooking)
1 cup buttermilk
1 cup sifted all-purpose flour
1/2 tsp salt
1/2 tsp soda
1 1/2 tsp baking powder
1/2 cup melted shortening or salad oil
1/2 cup brown sugar - packed
1 egg - beaten
Preparation

Combine oats and buttermilk and soak for 30 minutes or longer. Sift flour again with salt, soda and baking powder.
Add melted shortening, brown sugar and beaten egg to oatmeal mixture and blend thoroughly.
Stir in dry ingredients and mix ONLY long enough to moisten.
Spoon into greased muffin pan and bake at 350\u00b0 for 25 minutes or until brown.
Makes 12 medium sized muffins.
