Black Bean Soup - cooking recipe

Ingredients
    1 1/2 c. dry black beans
    2 1/2 c. water or stock
    1 medium onion, chopped
    1/4 bell pepper, chopped
    1 small carrot, diced
    1 bay leaf
    3 cloves garlic
    1/2 tsp. salt
    1/4 tsp. cumin
    2 diced plum tomatoes
    2 Tbsp. fresh cilantro
Preparation
    Soak beans overnight; discard soaking liquid.
    Add remaining ingredients except tomato and cilantro.
    Slow cook until beans are tender (slow cooker = 8 to 10 hours; simmer on stove for 3 hours). Garnish with tomato and cilantro.
