Hummus Tahini - cooking recipe
Ingredients

4 c. (about 2 1/2 cans) garbanzos chickpeas, drained
1 c. tahini (sesame paste)
1/3 c. warm water
1/3 c. best quality olive oil
1 1/2 tsp. salt
2 Tbsp. ground cumin seed
4 or more garlic cloves
freshly ground black pepper to taste
juice of 2 to 3 lemons
Preparation

Combine chickpeas, warm water, olive oil and juice of 1 lemon in the bowl of food processor with a steel blade.
Process until smooth and creamy.
Pause once or twice to scrape sides of bowl. Add garlic, salt, cumin seed and pepper to taste and process to blend.
Taste and correct seasonings.
Add more lemon juice to taste.
Scrape into a storage container.
Cover and refrigerate.
