Creamy Celery And Garlic Soup - cooking recipe

Ingredients
    1/2 Tbsp. oil
    3 green onions, chopped
    1 small head garlic, cloves separated and peeled
    5 celery ribs (without leaves)
    1 medium potato, peeled and diced
    2 1/2 c. water, divided
    2 tsp. low sodium instant chicken bouillon granules
    1 tsp. dried parsley flakes
    1/8 tsp. pepper
    1/4 tsp. salt
    1/4 c. grated Parmesan cheese (optional)
Preparation
    Combine oil and green onion in a microwaveproof 2-quart casserole dish.
    Microwave, uncovered, on High for 2 minutes, or until soft.
    Add garlic, celery, potato, 1/2 cup water, bouillon granules and parsley flakes.
    Cover and microwave on High for 8 minutes or until vegetables are soft, stirring once.
    Place in processor or blender with pepper and salt.
    Cover and microwave on High for 1 to 2 minutes, until heated through.
    Add grated cheese, if desired.
    Serves 6.
