Doughnuts - cooking recipe

Ingredients
    1 c. mashed potatoes
    1 1/2 c. sugar
    2 eggs
    1/4 c. shortening (soft)
    5 c. flour
    4 tsp. baking powder
    pinch of salt
    1 c. buttermilk
    1 tsp. soda
    1 tsp. vanilla
    1 tsp. cinnamon
Preparation
    Measure potatoes into large bowl.
    Add sugar; mix well.
    Blend in eggs and shortening; mix well.
    Add flour, baking powder and salt.
    Add buttermilk, soda, vanilla and cinnamon.
    Mix.
    Cover and let stand 15 minutes.
    Roll 1/4 inch thick and cut.
    Fry in deep fat.
