Pedernales River Chili - cooking recipe

Ingredients
    4 lb. ground beef
    1 large onion, chopped
    2 cloves garlic, minced
    1 tsp. ground oregano
    1 tsp. cumin seed
    6 tsp. chili powder
    2 cans tomatoes
    2 c. hot water
    salt to taste
Preparation
    Sear meat, onions and garlic in large, heavy skillet until lightly browned.
    Add seasonings, tomatoes and hot water.
    Bring to a boil.
    Lower heat and simmer about 1 hour.
    As chili cooks, skim off fat.
