Ginger Lime Scallops - cooking recipe

Ingredients
    1 lb. scallops
    3 Tbsp. Key lime juice
    1 Tbsp. olive oil
    1 Tbsp. butter
    1/3 c. walnuts
    1/4 c. parsley, chopped
    1/2 stick butter
    1 tsp. fresh ground ginger
    2 tsp. lime zest
    salt and pepper to taste
Preparation
    Mix room temperature butter with ginger, zest, salt and pepper.
    Refrigerate until firm.
    Dry scallops; saute until golden in oil.
    Drain.
    Stir in lime juice and saute 1 minute.
    Lower heat and add butter mixture one tablespoon until sauce thickens. Stir in nuts and sprinkle with parsley.
    Serves 2.
