Pineapple Pudding - cooking recipe

Ingredients
    2 eggs, slightly beaten
    1/3 c. pineapple juice
    juice of 1/2 lemon
    4 oz. cream cheese
    12 oz. Cool Whip
    1 large bag mini marshmallows
    1 (20 oz.) can drained pineapple
Preparation
    Mix the first 3 ingredients in a double boiler until thick. Cool.
    Cream the cream cheese in large mixing bowl.
    Add cooled mix.
    Add pineapple.
    Fold in Cool Whip.
    Fold in half bag of marshmallows.
    Chill for about 1/2 an hour and serve.
    Serves 6 to 8.
