Orange Roughy And Vegetables - cooking recipe
Ingredients

1 c. sliced onions, separated into rings
1 1/2 c. sliced carrots
1/2 c. sliced celery
1 (8 oz.) can tomato sauce
2 tsp. Dijon mustard
1/2 tsp. dried oregano
1/8 tsp. garlic powder
salt and pepper to taste
1/2 c. water
1 1/4 lb. orange roughy
Preparation

Spray an 8-inch baking dish with Pam.
Layer onions, carrots and celery in bottom of dish.
Mix tomato sauce, mustard, oregano, garlic, salt and pepper.
Pour 1/2 of sauce in separate bowl.
Add water to remaining sauce and pour over vegetables.
Lay fish over vegetables and sauce.
Pour sauce in separate bowl over fish fillets.
Bake for 45 to 50 minutes at 350\u00b0, uncovered.
Makes 4 servings.
