Peppers, Tomatoes And Onions(Peperonata) - cooking recipe

Ingredients
    4 medium green peppers
    2 medium onions
    1/4 c. olive oil
    1/2 tsp. parsley
    1/2 tsp. salt
    1/4 tsp. pepper
    1 c. tomatoes, chopped
Preparation
    Clean and slice peppers and onions.
    Heat oil in frying pan. Add peppers and
    onions;
    cook
    until
    just tender.
    Add remainder of ingredients.
    Cover and
    cook over low heat for 6 to 8 minutes. Makes 5 to 6 servings.
    This is wonderful on an antipasto platter or on top of a sandwich.
