Beef Rice Fiesta - cooking recipe

Ingredients
    1 lb. ground beef
    1 box beef-flavored rice mix
    2 Tbsp. butter or margarine
    1 medium onion, chopped
    1 green pepper, chopped
    1 (14 1/2 oz.) can canned tomatoes
    1 1/2 tsp. chili powder
    2 c. hot water
    4 oz. grated Cheddar cheese
Preparation
    In a 3-quart saucepan, brown ground beef and drain.
    Add the butter or margarine with the rice mixture and onion to the beef. Slowly add the hot water, green pepper, tomatoes and chili powder. Heat to boiling; reduce heat.
    Cover saucepan and simmer until liquid is absorbed and rice is tender, approximately 15 minutes. Sprinkle grated cheese on top.
    Allow to melt.
    Makes 6 servings.
