Apple And Cherry Sponge Cakes - cooking recipe

Ingredients
    2 large eggs
    pinch of cream of tartar
    2 Tbsp. sugar
    1/2 tsp. vanilla
    1/2 c. all-purpose flour, sifted
    1 dessert apple, peeled, cored and finely chopped
    1/8 c. candied cherries, finely chopped
Preparation
    Beat the eggs, cream of tartar, sugar and vanilla together until thick.
    Fold in the flour and the chopped apple.
    Divide the mixture between approximately 15 double thicknesses paper cases and sprinkle the cherries over each.
    Arrange, 5 at a time, in a circle in the microwave and cook for 45 seconds to 1 minute on High, until the cakes are just dry on top.
    Do not overcook.
