Spuddy Snowballs - cooking recipe

Ingredients
    1 c. stiff mashed potatoes
    8 oz. cream cheese
    1 tsp. vanilla
    4 to 5 c. powdered sugar
    pinch of salt
    8 oz. shredded coconut
Preparation
    Cream the cheese; add potatoes, vanilla and salt, blending until smooth.
    Add powdered sugar, a little at a time, mixing well after each time.
    Add 1 cup coconut.
    Chill thoroughly.
    Roll into balls and then in a bowl of the rest of the coconut.
    Cover closely and chill 2 or more hours.
    Much better after mellowing!
