Spinach-Cheese Potato Skins - cooking recipe

Ingredients
    2 medium baking potatoes, scrubbed
    1/2 c. thawed frozen chopped spinach, squeezed dry
    1/2 c. chopped green bell pepper
    1 1/2 oz. shredded low-fat Cheddar cheese
    2 Tbsp. plain fat-free yogurt
    1/4 tsp. chili powder
Preparation
    Pierce potatoes in several places with fork.
    Wrap potatoes in paper towels.
    Microwave on High for 10 minutes, turning paper over once.
    Let stand 5 minutes.
