Chicken Spinach Pinwheels - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach, thawed and squeezed dry
    1 egg, lightly beaten
    1/2 c. shredded Swiss cheese
    3 Tbsp. chopped pimento
    2 Tbsp. mustard, divided
    6 skinless, boneless chicken breasts, lightly pounded
    1 Tbsp. butter, melted
    1 c. plain low-fat yogurt
    1 Tbsp. flour
Preparation
    In a medium bowl, combine spinach, egg, cheese, pimento and 1 tablespoon mustard.
    Spread mixture on each chicken breast and roll.
    Fasten with toothpick.
    Place rolls in a 12 x 8-inch baking dish.
    Drizzle rolls with butter.
    Bake 40 minutes or until chicken is cooked through.
