Curried Artichoke Heart Rice Salad - cooking recipe
Ingredients

4 c. cooked rice
4 green onions, sliced thin
1/2 green pepper, chopped
1/4 c. pimento-stuffed olives (chopped)
2 (6 oz.) jars marinated artichoke hearts
3/4 tsp. curry powder
1/3 c. mayonnaise
3 Tbsp. lemon juice
1/3 c. olive oil
2 tsp. salt
3 Tbsp. vinegar
1/2 tsp. sugar
1 clove garlic, crushed
dash of pepper
Preparation

Cook rice with 1 or 2 chicken flavored bouillon cubes and no butter.
Cool.
Add onions, green pepper and olives.
Drain the artichoke hearts and chop into bite-size bits.
