Diabetic Cheesecake - cooking recipe

Ingredients
    12 oz. low fat cream cheese, softened
    1 tsp. vanilla
    2/3 C. water
    1/2 C. low fat cottage cheese
    1 large graham cracker crust
    1 Tbsp. maple syrup
    2 Tbsp. lemon juice
    1 Tbsp. liquid fructose
    1 pkg. Knox gelatine
    1 tsp. Sweet 'n Low
Preparation
    Dissolve gelatine in water; set aside.
    Beat cottage cheese to just reduce curds.
    Beat cream cheese; then gelatine.
    Mix well. Add vanilla, lemon juice, maple syrup, fructose and Sweet 'n Low. Mix well.
    Pour into shell and chill for 2-3 hours.
