Whole Salmon Baked In Foil - cooking recipe
Ingredients

6 to 8 lb. cleaned whole salmon
1 c. thinly sliced carrots
1 c. thinly sliced onions
1/4 c. thinly sliced shallots
1 c. thinly sliced celery
1/2 tsp. thyme
salt
2 c. dry white wine
8 peppercorns, crushed
1 clove garlic, crushed and unpeeled
1 bay leaf
Preparation

Preheat oven to 400\u00b0.
Place cleaned salmon on long, double-length piece of heavy-duty aluminum foil on top of large baking pan.
Place other ingredients on top.
Bring up edge of foil and seal.
Bake for 50 minutes to 1 hour.
At end of 50 minutes, loosen foil and test for doneness.
Fish is cooked when back center fin can be easily removed when pulled with fingers. Remove from oven.
Skin when cold.
(Save the liquid for court bouillon.)
Decorate with thinly sliced cucumber, dill sprigs, lemon and lime slices, cherry tomatoes, etc.
Serve with Cucumber Sauce.
