Tofu Pie - cooking recipe

Ingredients
    1 (3 oz.) pkg. lime Jell-O
    1 c. boiling water
    1 Tbsp. lemon juice
    1/2 tsp. mint extract
    1/2 (10 oz.) block soft tofu, drained
    1 Ready-Made pie crust
    1 (8 oz.) tub Cool Whip
Preparation
    Dissolve Jell-O in boiling water.
    Cool well.
    Add lemon juice and mint extract.
    Blend Jell-O mixture and tofu until smooth, approximately 45 seconds.
    Pour into pie crust; chill overnight. Top with Cool Whip and sliced kiwi or fresh strawberries.
