Pumpkin Muffins - cooking recipe

Ingredients
    1 1/2 c. oat bran
    2/3 c. brown sugar
    1/2 c. flour
    2 tsp. baking powder
    1/4 tsp. salt
    1 c. pumpkin
    1/2 c. skim or 1% milk
    2 egg whites, beaten, or Egg Beaters
    2 Tbsp. oil (no cholesterol)
Preparation
    Combine the oat bran, brown sugar, flour, baking powder, salt and pumpkin in a large bowl.
    Make a well and combine the pumpkin, milk, egg whites and oil.
    Stir until dry ingredients are moistened.
    Spoon into muffin pans, which have been sprayed with Pam.
    Fill 2/3 full and bake at 425\u00b0 for 20 minutes.
    Remove from pan immediately.
    Makes 1 dozen.
