Dalmation Rice And Caper Salad - cooking recipe
Ingredients

6 c. brown rice, cooked and cooled
1/2 c. finely chopped green onions
1 c. diced, peeled cucumbers
1 large tomato, diced
1/4 c. drained capers
1/3 c. olive oil
3 Tbsp. white vinegar
2 cloves garlic, minced
1/2 tsp. each dry mustard; sugar; salt and thyme
1/4 tsp. ground sage
1/8 tsp. pepper
Preparation

In large bowl, combine rice, onions, cucumbers, tomato and capers.
In small container with tight-fitting lid, combine oil, vinegar, garlic, mustard, sugar, salt, thyme, sage and pepper. Cover and shake well, pour over rice and stir.
Garnish with hard-cooked eggs, if desired.
Makes 6 servings.
