Zucchini Casserole - cooking recipe

Ingredients
    6-8 c zucchini or yellow squash
    1 sweet onion, sliced
    2 Tbsp butter
    6 oz mozzarella, shredded
    1 14oz can tomato sauce
    1/2 c Open Pit barbecue sauce (original)
    Pepperidge Farm stuffing mix
    grated Parmesan cheese
Preparation
    Cook squash to tender crisp, cool.
    Cook onion in butter until transparent.
    Combine tomato sauce and BBQ sauce.
    Layer squash, onion and cheese in 7x11 baking dish - two layers. Pour sauce over top. Sprinkle top liberally with stuffing mix and Parmesan.
