Mom'S Chicken Soup - cooking recipe
Ingredients

3 lb. chicken pieces
1 large onion, chopped
1 c. celery, diced small
1 c. carrot, diced small
1/2 c. uncooked rice
1/2 c. barley
2 chicken bouillon cubes
salt and pepper to taste
Preparation

Rinse chicken and remove most of fat.
(Too much fat will make soup greasy.)
Place in 6-quart pot and cover with cold water. Bring to a boil and skim scum as it rises.
Add onion, celery, salt and pepper.
Cover and simmer 3 to 4 hours, then add carrot, rice, barley and bouillon.
Simmer soup one more hour.
Remove meat from bones.
Return meat to soup and discard bones.
Ready to serve.
Be careful of small bones.
