Escalloped Cabbage - cooking recipe
Ingredients

1/4 lb. cabbage
1/2 tsp. salt
1 c. milk
2 tsp. flour
pepper
butter
buttered bread crumbs
Preparation

Remove outer leaves and use heart of cabbage, cut fine.
Cook in boiling salted water until tender but not soft.
(Cook uncovered to retain natural color; drain.)
Make a medium white sauce as follows: melt butter, add flour, salt and pepper.
Stir until smooth; add milk gradually and cook until smooth and glossy. Add cabbage and white sauce.
Sprinkle top with buttered bread crumbs after pouring into greased baking dish.
Bake in moderate oven (350\u00b0) until nicely browned (about 20 minutes).
