Hot Cajun Potato Salad - cooking recipe
Ingredients

5 medium potatoes, quartered
1 can green beans
2 Tbsp. white vinegar
1/4 c. oil
1 medium onion
salt and pepper to taste
Preparation

Cook potatoes (boil).
Strain, place in crock or heavy bowl that will hold heat.
Heat green beans in potato water.
Drain. Heat oil until hot.
Slice onion.
Cube potatoes with knife. Place green beans over potatoes.
Place onion (separated) over green beans.
Sprinkle vinegar over onions.
Salt and pepper. With hot oil, drizzle over onions.
(If onions don't sizzle, oil isn't hot enough.) Mix gently!
Serve hot.
