Basil-Garlic Pesto - cooking recipe

Ingredients
    1/2 c. low-sodium chicken broth
    6 large cloves garlic, thinly sliced
    2 c. lightly packed basil leaves
    2 Tbsp. toasted walnuts
    1/3 c. no-salt-added low-fat cottage cheese
    2 Tbsp. grated Parmesan cheese
    1/4 tsp. black pepper
    1 Tbsp. olive oil
Preparation
    In a small skillet, bring the broth and garlic to a boil; reduce the heat to low and simmer, uncovered, for 4 minutes or until the garlic is tender.
    Transfer the broth and garlic to a food processor or blender; add the basil, walnuts, cottage cheese, Parmesan cheese, salt and pepper and whirl for 30 seconds or until smooth.
    Add the oil and blend for 10 seconds.
    Serve immediately over pasta.
    Makes about 1 cup.
