Chinese Spinach - cooking recipe

Ingredients
    1 lb. spinach, rinsed well
    2 Tbsp. olive oil
    1/2 tsp. sugar
    2 Tbsp. soy sauce
    1/2 c. sliced water chestnuts
    2 Tbsp. chopped onion
Preparation
    Cut fresh spinach stems into 3-inch pieces.
    Tear leaves into bite size pieces.
    Cook, covered, in a very small amount of water. Reduce heat when steam forms.
    Cook 3 to 5 minutes, turning frequently with a fork.
    Drain well.
    Heat oil, sugar and soy sauce in a skillet. Add spinach, water chestnuts and onion.
    Cook, tossing lightly, 2 to 3 minutes or until spinach is coated and heated.
