Beef Stuffed Zucchini - cooking recipe

Ingredients
    3 medium zucchini
    1/3 c. olive oil
    1/2 c. minced onion
    1 lb. ground beef
    2 tsp. salt
    1/2 tsp. ground pepper
    1/4 tsp. oregano
    1/2 c. tomato sauce
Preparation
    Use straight, plump zucchini.
    Wash, dry and remove stems. Cut in half lengthwise and scoop out pulp and chop it.
    Reserve the shell.
    Heat 2 tablespoons oil in skillet.
    Saute onions for 5 minutes.
    Mix in zucchini pulp.
    Saute for 5 minutes.
    Add beef and cook until no pink remains, stirring frequently.
    Mix in salt, pepper and oregano.
    Stuff shell.
    Arrange in an oiled baking dish.
    Sprinkle with remaining oil and cover with tomato sauce. Bake at 350\u00b0 for 40 minutes.
