Bistra'S Bulgarian Meatball Soup - cooking recipe

Ingredients
    1 lb. ground beef
    1/2 bunch green onions, sliced
    6 Tbsp. rice
    1 green bell pepper, chopped
    1 tsp. paprika
    2 carrots, peeled and sliced thin
    1 tsp. dried savory
    3 tomatoes, peeled and chopped
    salt and pepper to taste
    1 small yellow chile, split open with most, not all seeds removed
    flour
    1/2 bunch parsley, minced
    6 cups water
    1 egg
    2 beef bouillon cubes
    1 lemon, juice only
Preparation
    Combine ground beef, rice, paprika, and savory.
    Season to taste with salt and pepper.
    Mix lightly but thoroughly.
    Form meat into 1 inch balls, then roll in flour.
    Combine water, bouillon cubes, 1 tsp. salt. 1 tsp. pepper, green onions, green pepper, carrots and tomatoes in a large kettle.
    Cover, bring to a boil, reduce heat and simmer 30 minutes.
    Add meatballs, cover and bring to a boil again.
    Reduce heat and simmer another 20 minutes.
    Add chiles and simmer uncovered for 40 minutes or until rice is done. Add parsley during last 5 minutes of cooking time.
    Salt and pepper to taste.
    Just before serving beat egg with lemon juice.
    Stir in 1-2 Tbsp. hot soup into egg/lemon mixture, pour into soup.
    Heat and stir until soup slightly thickens, but do not boil.
