Four Cheese Vegetable Lasagna - cooking recipe
Ingredients

12 uncooked lasagna noodles
2 tsp. vegetable oil
2 c. chopped broccoli
1 1/2 c. thinly sliced carrot
1 c. sliced green onions
1/2 c. chopped red bell pepper
3 garlic cloves, minced
1/2 c. flour
3 c. 1% milk
1/2 c. grated fresh Parmesan cheese, divided
1/4 tsp. salt and pepper
1 (10 oz.) pkg. frozen chopped spinach, thawed, drained and squeezed dry
1 1/2 c. 1% cottage cheese
1 c. shredded Mozzarella cheese
1/2 c. shredded Swiss cheese
Preparation

Cook lasagna noodles, omitting salt and fat. Drain; set aside.
