Chicken Saute With Garlic - cooking recipe

Ingredients
    3 to 4 lb. chicken, cut into serving pieces
    3 Tbsp. butter
    1/4 c. olive oil
    30 garlic cloves, unpeeled
    10 shallots, peeled and finely chopped
    salt and pepper
    2/3 c. dry white wine
Preparation
    Heat butter and oil in saute pan or cast-iron casserole. Brown chicken pieces.
    Add garlic and shallots.
    Saute for 10 minutes or until skins of garlic are lightly colored.
    Season liberally with salt and pepper. Add the wine.
    Cover, reduce heat and cook gently for 30 minutes. When meat is done, uncover and turn heat on high.
    Boil this, stirring constantly, until liquid evaporates.
    Bring saute pan to the table and serve chicken pieces with the garlic cloves.
    Eat the garlic with the chicken, first biting into each clove so that you can slide the tough skin off and discard it on your plate. The taste of the garlic is exquisitely subtle.
    You can also add broccoli and Brussels sprouts (quartered or halved) to this.
    Can be served with rice or pasta.
    Serves 4.
