Nell'S Banana Nut Cake - cooking recipe
Ingredients

1/2 c. margarine, melted
1 1/4 c. sugar
2 eggs, beaten
1 c. pecans, toasted
2 c. flour
1 tsp. soda
2 tsp. baking powder
1/2 tsp. salt
1 1/2 c. mashed ripe bananas
1 tsp. vanilla flavoring
Preparation

Toast pecans in 350\u00b0 oven about 5 minutes.
Beat eggs until light.
Slowly add sugar.
Beat in margarine and vanilla.
Blend together dry ingredients and add alternately with bananas, beating after each addition.
Mix in 3/4 cup pecans that have been chopped.
Retain about 1/4 cup larger pieces for top of cake. Grease and flour 2 (9-inch) cake pans.
Pour mixture into pans and bake for 25 to 30 minutes at 350\u00b0.
Frost layers with vanilla, powdered sugar frosting.
Arrange 1/4 cup pecans on top of cake.
