Eggplant Sauce For Pasta - cooking recipe
Ingredients

1 large eggplant, peeled and cubed
2 (15 1/2 oz.) cans tomato sauce
1 large can tomatoes
fresh basil or dry to taste
1 large yellow onion, chopped
garlic to taste, minced
black pepper to taste
1/4 c. olive oil
Preparation

Saute eggplant and onion in olive oil about 15 minutes.
Add other ingredients.
Simmer 30 minutes, stirring occasionally. Serve over your favorite pasta.
Sprinkle with grated Romano cheese.
