Ham And Cheese Soup - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/2 c. onions, chopped
    1/2 c. celery, chopped
    1/4 c. bell pepper, chopped
    1 c. diced ham
    4 c. chicken stock
    1 bay leaf
    1/2 tsp. dried basil
    1/4 c. cream
    1/4 c. grated cheddar cheese
    3/4 c. cubed Velveeta cheese
    chopped green onions for garnish
Preparation
    In a large sauce pan, saute onions, celery, and bell pepper in olive oil until tender.
    Add ham and continue to saute to release some oils and meld the flavors.
    Add stock, bay leaf, and basil.
    Simmer to reduce slightly (20 to 30 minutes).
    Add cream and return to a boil to thicken a bit.
    Slowly add cheese, stirring constantly. Serve immediately.
    Garnish with green onion.
