Ingredients

1 (9-inch) pie crust, baked
3/4 c. granulated brown sugar substitute
2 Tbsp. flour
1 c. cold skim milk
2 eggs, separated
2 Tbsp. margarine
1 tsp. vanilla
dash of salt
2 tsp. granulated sugar substitute
Preparation

Combine brown sugar substitute, flour, milk, egg yolks, margarine, vanilla and salt.
Cook over medium heat until mixture comes to a rolling boil, stirring constantly.
Pour pudding into baked pie crust.
Whip egg whites until soft peaks form; add sugar substitute and whip until thick and stiff.
Spread on top of pudding, sealing edges.
Bake at 350\u00b0 until lightly browned, about 12 to 15 minutes.
