Creole Black-Eyed Peas - cooking recipe

Ingredients
    4 slices bacon, fried crisp and crumbled
    1 c. chopped onion
    1 c. chopped green pepper
    1 c. chopped celery
    1 (10 oz.) can diced tomatoes and green chilies (Ro-Tel)
    4 c. cooked black-eyed peas
    salt to taste
    1 bay leaf
Preparation
    Saute onion, green pepper and celery in bacon drippings until tender.
    Stir in Ro-Tel, black-eyed peas, salt, bay leaf and 1/2 of crumbled bacon.
    Cook over low heat for 30 to 45 minutes, stirring occasionally.
    Add water, if necessary.
    Remove bay leaf and sprinkle with remaining crumbled bacon just before serving.
