Black Beans - cooking recipe

Ingredients
    2 cans black beans
    4 c. water
    1 tsp. salt
    1 medium onion, peeled, studded with cloves
    1 clove garlic
    1/2 tsp. thyme
    1/2 tsp. oregano
    1 lb. lean ground meat
    1 c. chopped onion
    1 large green pepper, sliced
    1 clove garlic, minced
    2 Tbsp. vegetable oil
    1 c. peeled diced tomato
    3 c. cooked rice
    tomato salsa
    orange slices
Preparation
    Place beans, salt, studded onion and garlic in Dutch oven. Simmer 1 hour.
    Add thyme and oregano and cook 30 minutes.
    Saute onion, pepper and garlic in oil until tender, but not brown.
    Add beans with liquid and meat which has been browned.
    Add tomatoes. Cook; stir occasionally.
    Mash 1 cup bean mixture and return to pan.
    Cook until sauce thickens.
    Prepare rice.
    Place in bowl and top with bean and tomato salsa.
    Serve with sour cream and cornbread.
    Garnish with orange slices.
