3 Tbsp. cinnamon stick pieces (coarsely crushed cinnamon sticks)
1 quart whole milk
1 c. whipping cream
1 c. sugar
4 egg yolks
Preparation

Combine cinnamon stick pieces with the whole milk and whipping cream in a large saucepan.
Heat 15 to 20 minutes on low heat.
Take off heat and strain.
Pour into large saucepan.
Stir in sugar. Quickly whisk in egg yolks, one at a time. Cook over medium heat until mixture coats the back of a spoon. Strain into metal bowl. Set bowl in larger bowl if ice water until cool. Freeze according to directions with ice cream maker.
This is very rich and creamy. Place in freezer until ready to use.
