Eggplant Special - cooking recipe

Ingredients
    1 large eggplant
    2 Tbsp. butter
    1/2 c. chopped onion
    1 minced garlic clove
    1 1/4 c. fine dry bread crumbs
    3/4 lb. ground beef
    1 egg, beaten
    1/4 tsp. salt
    pepper to taste
    1 Tbsp. oil
    2 Tbsp. Parmesan cheese
Preparation
    Cut eggplant lengthwise; scoop out inside, leaving a 3/4-inch shell.
    Place shells on slightly oiled shallow pan.
    Chop eggplant pulp.
    Cook in butter until clear.
    Add onion and garlic; cool. Add bread crumbs, ground beef and egg; season with salt and pepper.
    Mound eggplant shells with mixture; brush lightly with oil.
    Sprinkle with additional bread crumbs and Parmesan cheese. Bake at 325\u00b0 for 45 minutes.
    Serve with chili sauce or hot catsup.
    Serves 4.
